The Deglon High Woods Small Santoku Knife 13cm is a compact, highly versatile knife designed for precision prep work and everyday kitchen tasks. Combining traditional Japanese-inspired blade design with premium materials, it’s ideal for chefs who prefer a smaller, more controlled cutting tool.
With a 13cm blade, this small santoku is perfect for slicing, dicing, and mincing vegetables, fish, and boneless meats. Its shorter length offers greater control, making it especially useful for detailed prep or smaller workspaces. Santoku knives are known as “three-purpose knives” for their all-around capability in the kitchen.
Crafted from stainless steel, the blade provides a reliable balance of sharpness, corrosion resistance, and durability. With a hardness of approximately 55–57 HRC, it’s designed to hold an edge well while remaining easy to maintain. The blade features small indentations along its surface, which help reduce food sticking during slicing. This improves efficiency when working with ingredients like potatoes, cucumbers, or fish.
A standout feature of the High Woods range is its unique handle made from white oak and walnut wood. The diamond-shaped ergonomic design not only looks distinctive but also provides a comfortable, secure grip during use. Built with a full tang and stainless steel bolster, the knife offers excellent balance and durability. This ensures stability during cutting and enhances overall control, important for precision work.
Part of Deglon’s Longtime certified range, this knife is built to last, with high-quality materials and robust assembly using internal rivets and resin. It’s designed for long-term use in both professional and home kitchens. Due to its wooden handle, the knife is not dishwasher safe and should be hand-washed and dried to maintain its appearance and longevity.
This knife is particularly suited for chopping herbs and vegetables, preparing small portions, slicing fish or boneless meats, and quick, everyday kitchen prep. Its compact size makes it a great alternative to larger chef’s knives, especially for those who prefer a lighter, more agile tool.
