The Deglon High Woods Filleting Knife 17cm is a precision-crafted tool designed for filleting fish with accuracy and ease. Combining a flexible blade with premium materials, it delivers clean, controlled cuts while maintaining the integrity of delicate flesh. A signature feature of the High Woods range is its distinctive handle made from white oak and walnut wood. The ergonomic diamond-shaped design provides a comfortable, secure grip, while also delivering a premium, natural aesthetic.
Beyond filleting, the thin, sharp blade is also perfect for delicate slicing tasks such as preparing carpaccio, trimming fish, or slicing soft ingredients like tomatoes and foie gras. Its flexibility ensures smooth, accurate cuts without tearing. The 17cm narrow, flexible blade is specifically designed to glide along bones, allowing you to separate fillets cleanly from the skin and skeleton. This size is ideal for fish up to around 1–2kg, offering excellent manoeuvrability and precision.
Crafted from stainless steel, the blade offers a strong balance of sharpness, corrosion resistance, and durability. With a hardness rating of 55–57 HRC, it maintains a reliable edge while remaining easy to sharpen and maintain. The knife features a full tang with a stainless steel bolster, ensuring strength, stability, and excellent balance. This construction enhances control, which is essential for precise filleting work.
Due to its natural wooden handle, the knife should be hand-washed and dried immediately after use. It is not suitable for dishwasher cleaning, helping preserve both the wood and blade quality. Weighing just over 100g, the knife is lightweight and easy to manoeuvre, reducing fatigue during repetitive tasks such as filleting multiple fish.

Free delivery on all orders over £60 (ex vat) and up to 30kg. Applies to UK mainland (UK Mainland excl. Highlands and Islands) and items held in stock only.
Orders under £60 are charged at £6.95 +VAT for delivery. All orders are dispatched with a Fast Courier Service.
All deliveries are kerb side only by our courier partners.
Please be aware that orders may come in separate deliveries from different locations within the Cooksmill fulfilment centres.

Returning items purchased online
If you purchase a stock item online that you want to return then you can send it back to us within 28 days of delivery and we will refund the value of the items that we receive back in resaleable condition. Please note you are required to arrange the transport of the return to us and cover any cost associated. We recommend that you use a tracked method to ensure this reaches us. We accept no responsibility for lost, damaged, stolen or undelivered packages. Please also put a note containing your order number in the package with the items.

Special orders and orders of appliances may incur restocking charges from the manufacturer. This can be up to 30%.
Special Orders In the event that an item ordered is not currently in stock, or if the quantity ordered exceeds our standard inventory levels, a restocking fee may be applied. This fee covers the costs associated with procuring and handling the special order. The restocking fee will not exceed 30% of the total value of the affected items. By proceeding with the order, the customer acknowledges and agrees to these terms.
If there was a picking error and you received incorrect items we will arrange for a replacement.
If you receive any damaged items please email us immediately. We require images of the broken item and the packaging within 48 hours of the goods being signed for to process your claim.
