The Deglon Forged Sabatier Canadian Fillet Knife 15cm is a specialised, professional-grade knife designed for precision filleting and delicate slicing tasks. Featuring a slim, flexible blade and traditional Sabatier construction, it offers excellent control, balance, and clean cutting performance.
This knife features a 15cm narrow, flexible blade in a distinctive Canadian profile, designed to follow the natural contours of fish. It allows you to separate fillets cleanly from skin and bones, making it ideal for fish up to around 1–2kg. Beyond filleting, the thin blade is perfect for precision slicing tasks such as preparing carpaccio, trimming fish, or slicing soft ingredients like tomatoes and foie gras. Its flexibility ensures smooth cuts without tearing delicate textures.
The blade is fully forged from stainless steel, providing excellent strength, corrosion resistance, and durability. With a hardness of around 55 HRC, it offers a reliable edge that is easy to maintain and sharpen. A rounded, solid bolster enhances balance and manoeuvrability, giving the knife a stable, controlled feel, especially important when working with precise filleting movements.

Free delivery on all orders over £60 (ex vat) and up to 30kg. Applies to UK mainland (UK Mainland excl. Highlands and Islands) and items held in stock only.
Orders under £60 are charged at £6.95 +VAT for delivery. All orders are dispatched with a Fast Courier Service.
All deliveries are kerb side only by our courier partners.
Please be aware that orders may come in separate deliveries from different locations within the Cooksmill fulfilment centres.

Returning items purchased online
If you purchase a stock item online that you want to return then you can send it back to us within 28 days of delivery and we will refund the value of the items that we receive back in resaleable condition. Please note you are required to arrange the transport of the return to us and cover any cost associated. We recommend that you use a tracked method to ensure this reaches us. We accept no responsibility for lost, damaged, stolen or undelivered packages. Please also put a note containing your order number in the package with the items.

Special orders and orders of appliances may incur restocking charges from the manufacturer. This can be up to 30%.
Special Orders In the event that an item ordered is not currently in stock, or if the quantity ordered exceeds our standard inventory levels, a restocking fee may be applied. This fee covers the costs associated with procuring and handling the special order. The restocking fee will not exceed 30% of the total value of the affected items. By proceeding with the order, the customer acknowledges and agrees to these terms.
If there was a picking error and you received incorrect items we will arrange for a replacement.
If you receive any damaged items please email us immediately. We require images of the broken item and the packaging within 48 hours of the goods being signed for to process your claim.
