  • 200g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 200g brown sugar
  • 200g unsalted butter, softened
  • 4 eggs
  • 2 tbsp black treacle
  • Zest of 1 orange
  • 100g mixed dried fruit

Instructions:

  1. Preheat oven to 180°C. Grease and line a square 23cm cake pan.
  2. Sift together flour, baking powder, cinnamon, and nutmeg.
  3. Cream butter and sugar until fluffy. 
  4. Whisk in eggs one at a time.
  5. Fold in the flour mixture, treacle, orange zest, and dried fruit.
  6. Pour into the prepared tin and bake for 40-45 minutes.
  7. Cool in the tin, then turn out onto a wire rack.

  9. Serve with hot or cold with custard or cream.

Cinnamon and Apple Bread Pudding

Ingredients:

  • 4 cups bread cubes
  • 2 cups chopped apples
  • 1/2 cup raisins

  • 3/4 cup brown sugar
  • 1 tsp vanilla extract

Instructions:

  1. Preheat oven to 175°C. Place bread, apples, and raisins in our enamel baking dish.
  2. Whisk together eggs, milk, sugar, vanilla, and cinnamon in a bowl.
  3. Pour over the bread mixture, ensuring all pieces are coated.
  4. Bake for 45 minutes until set and golden.
  5. Serve warm with a dollop of cream.

Steamed Clementine Pudding

Ingredients:

  • 100g unsalted butter, softened
  • 150g caster sugar
  • 2 large eggs
  • Zest and juice of 3 clementines
  • 100g self-raising flour, sifted
  • 1 tbsp milk
  • 1 tsp mixed spice (cinnamon, nutmeg, and allspice)
  • 2 tbsp clementine marmalade

Instructions:

  1. Butter a 1-litre pudding basin. Spoon clementine marmalade into the bottom.
  2. Cream butter and sugar. Beat in eggs one at a time with a bit of flour.
  3. Mix in clementine zest, juice, and mixed spice. Fold in the remaining flour and milk to achieve a soft consistency.
  4. Spoon batter over marmalade. Cover with baking parchment and foil, tied with string.
  5. Steam in a pot of simmering water (halfway up basin) for about 1.5 to 2 hours, checking the water level.
  6. Once risen and firm, remove, rest, and then turn out onto a plate.
  7. Enjoy warm, ideally with a dollop of whipped cream or vanilla custard.
